I don't understand Chicago in this area. No one will think about catsup on his or her dog, but goes crazy if even the crappiest of mustards aren't around.

mustard is essential. the entire concept of a chicago dog is a delicate balance of salty/sweet, hot/mild. poppyseed bun, vienna beef dog, yellow mustard, chopped onion, green relish, tomato wedges, pickle spear, celery salt, and sport peppers. its an adult taste. ketchup is for the kids.
