My father was German and my mother Irish. My wife is 100% Irish. So my kids are 3/4 Irish and stuck with an 11 letter German surname.

You are correct but the toast is part of Irish (and Scottish) tradition. I tried to find a video that pronounced the words. There may be a slight variation but you get the general idea.
