The Peach would gladly take UCF again this year. We brought a ton of fans to Atlanta for multiple days. It also had more TV viewers than any Peach Bowl except the time it was a playoff semifinal bowl.

Lots of predictions it will be the fiesta, but that is largely based on Boise being forcasted as the representative.
The committee only decides the cfp. Everything else is done by contract and ordered bowl picks for the Rose, Sugar and Orange.

The Rose gets the Big 10 and PAC, unless a semifinal. They pick first after the Semi-Finals allowing them to keep the traditional match up when ever possible.
The Sugar gets Big xii and SEC, unless a semifinal. They take the champion of either conference if they are not selected for the cfp, if the SEC or big xii champ is in the cfp, or both are, the spots become at-large.
The Orange gets the ACC champ vs Notre Dame (if they meet various requirments, or the highest ranked non-champ from the Big 10/SEC in years it isn't a semi-final.
The Citrus Bowl invite is tied to the Orange Bowl selection. The Orange has an at-large spot if the ACC makes the cfp and/or Notre Dame does not meet it's requirements.
Those are the contracts in the contract bowls and basis for the autonomy of the A5.
The Peach, Cotton, and Fiesta have at-large spots when not hosting the cfp and are assigned by the committee after the contract bowl selections when not hosting the cfp.
For this year the Cotton and Orange are hosting. Every other spot is possible for the auto for the NY6. The most likely outcome is a peach or fiesta spot, based on match up and geography which the committee takes into account with input from the bowls.
