Texas is on my tentative itinerary for next year. Not sure I'll make it to that place, but I'll definitely be sampling Texas BBQ. Especially brisket.

Hey Texans .. I'm heading to Ft.Davis, Lajitas, Terlingua, Big Bend area for the first week of October. Be looking for Texas BBQ, Texas cooking, and Real Mexican ... Throw me a bone !!
You won't find BBQ out there. Also won't find what most Texans consider Mexican food either... No Tex-Mex.
I'm not familiar with Fort Davis, but if you can make a quick detour through Balmorhea, the Cueva de Oso is great.
I don't typically stop in Lajitas. I did once walk across the river to Paso Lajitas for lunch.
Speaking of which, I highly recommend you bring your passport and go across the river at Boquillas. The guy in the boat in my signature will row you across for a few bucks. Don't worry, it's legal now, as long as you have your passport. The only place to eat there is Falcon's. Since they reopened the border crossing a few years ago, the Falcons have really spruced up their place. Also gotta go have a drink at El Park Bar across the street from Falcon's. Spent many days at El Park Bar drinking lukewarm beer, playing pool and listening to Danny pick his guitar.
Terlingua is getting a bit crowded for me, but still a great home base for exploring. I'm usually eating at camp and not in restaurants but I've been to a few. Starlight Theater is well known, pricy, but best food you'll find there. Been to Rio Bravo once, I recall it being good stuff, typical West Texas Mexican food. Haven't been to La Kiva since the owner was killed, but it's supposedly renovated. Had many many good nights and bad mornings there. Probably worth checking out.
I also recommend taking the River Road from Terlingua through Lajitas on up at least to Big Hill. Closed Canyon is a little further and is a great easy hike right off the road.
When you go through Alpine, Magoo's is a great place to eat. Good Mexican food, good breakfasts, everything I've ever eaten there is good. Pick up plenty of Big Bend Brewery beers, they're good.
Take lots of water, you'll need at least a gallon a day. Stop for gas every chance you get south of US 90. Not many chances.
Enjoy yourself there. That area is heaven to me. I've taken about 50 trips out there and still find a brand new adventure every single trip. And I've got many many things I've never done out there.
